two 10 ounce boneless strip steaks butter salt freshly ground black pepper Cognac
Dry steak on paper towels. Melt enough butter to make a good film over the bottom of a heavy skillet. When the fat is hot, add the steaks and sear on both sides. Lower the heat and cook about 3 - 4 minutes on each side for medium rare. Lift from the skillet to a heated platter and season with salt and pepper. Pour off all the fat. Add 2 tablespoons of butter to the pan. When melted, stir in 3 tablespoons of cognac. Bring to a boil and pour over steaks.
