Stuffed & Baked Tomatoes
4 firm tomatoes 1 small onion 1/4 small green pepper, seeded

Scoop insides out of tomatoes and chop well. Mix with chopped onion and green pepper. Add 1 slice of very dry white bread made into coarse crumbs. Add 1 tablespoon of melted butter, salt and pepper to taste. Refill tomato cases. Sprinkle tops with bread or cracker crumbs. Bake at 350ºF. for about 45 minutes.
