| Bananas Foster 2 1/3 cup of firmly packed light brown sugar 1/4 cup (1/2 stick) of unsalted butter 4 firm ripe bananas, peeled, halved lengthwise, then crosswise to form quarters just before serving A pinch of freshly grated or ground nutmeg 1/3 cup of banana liqueur 1/3 cup of light rum 1 pint of vanilla or butter pecan ice cream
In a large chafing dish or skillet over moderate heat, combine the sugar and the butter, stirring often, just until they melt together and start to bubble. Add the banana quarters and saute, turning often, just until they soften, but still hold their shape. Add the nutmeg. Remove from the heat. In a saucepan, heat the rum and the liqueur. Pour over the bananas, do not stir in. Using a safety match, carefully ignite the dessert, spooning the flaming sauce over the bananas until the flames subside. Spoon the bananas and their sauce around individual portions of ice cream in a large dessert bowl. Serve at once. back to beverages |
