1 cup of carrot juice 4 tomatoes, skinned, seeded, and coarsely chopped 1 tablespoon of lemon juice 1/2 cup of parsley, coarsely chopped 1 tablespoon of gingerroot, grated 6 ice cubes 1/2 cup of water chopped fresh parsley, for garnish
Put the carrot juice, tomatoes, and lemon juice in a food processor and process until combined. Add the parsley to the food processor along with the ice cubes and ginger. Process until well combined, then pour in the water and process until smooth. Pour the mixture into tall glasses and garnish with parsley. Serves 2. |
