| | Pineapple and Coconut Shake
1 1/2 cups of pineapple juice 1/2 cup of coconut milk 3/4 cup of vanilla ice cream 1 cup of frozen pineapple chunks 2 tablespoons of grated fresh coconut, to garnish
Pour the juice and milk into a food processor; add the vanilla ice cream and process until thoroughly blended. Add the pineapple chunks and process until smooth. Pour the mixture into glasses; garnish with the grated fresh coconut. Serves 2. |
