Beefed Up Mini Tostadas
1 pound of ground beef
1 1/2 cups (6 ounces) of shredded Cheddar cheese
1/2 cup of tomato salsa
one 16 ounce bag of round tortilla chips , about 48 chips
Avocado sauce |

Cook ground beef in a large skillet over medium heat until browned, stirring to crumble. Drain off drippings. Add cheese and salsa to ground beef; stir well.
Arrange tortilla chips on a baking sheet; spoon about 1 tablespoon of beef mixture on each tortilla chip. Bake at 350ºF. for 5 minutes or until hot.
Serve immediately with avocado Sauce. Yield: about 4 dozen appetizers
Avocado Sauce
1 medium avocado, peeled and coarsely chopped
1/4 cup of sour cream
1/4 teaspoon of lemon juice
Combine all ingredients in container of an electric blender or food processor; process until smooth.
Spoon mixture into a small serving bowl, chill thoroughly. Yield: about 1 cup
