Snappy Cheese Wafers

 

Snappy Cheese Wafers

2 cups of shredded sharp Cheddar cheese
1 cup of butter or margarine, softened
1/4 - 1/2 teaspoon of red pepper
1/2 teaspoon of dry mustard
1 cup of all purpose flour
1 cup of self rising flour
2 cups of crisp rice cereal



Cream cheese and margarine until smooth, using electric mixer. Add pepper, mustard and  flour. Mix well. Stir in rice cereal. Form dough into small balls, flatten with a fork to make wafers. Place on lightly greased cookie sheets. Bake at 350ºF. for 12 -1 5 minutes or until lightly browned. Store in an airtight container. Makes approximately 3 dozen.
