1/2 cup of garbanzo beans or 1 can of cooked garbanzos
1 small chopped onion
4 tablespoons of chopped parsley
3 tablespoons of butter
1/2 teaspoon of coriander
1/4 teaspoon of cumin
salt and pepper
oil for frying



If you're using dried garbanzo beans, soak them overnight and cook for about 2 hours until very soft. Strain and either mash them very well or put them through a food grinder. Sauté the onion and garlic in butter for 5 minutes and add to the beans. Mix in all other ingredients except the oil. Roll into little balls about the size of a walnut and deep fry over high heat. Serve immediately.
