| | Holiday - Smoked Salmon Spread
12 ounces of smoked salmon 1 cup of cream cheese, softened to room temperature 2 - 3 teaspoons of prepared horseradish 2 tablespoons of finely chopped onion 1 teaspoon of lemon juice 1/2 cup of minced fresh parsley
Place the salmon in a medium sized bowl, and separate it into flakes. Add the remaining ingredients except for the parsley and stir until the mixture is the consistency of a spread.
Shape the salmon mixture into a log. Spread the parsley out on waxed paper, and roll the log in the parsley to coat well. Transfer to a serving platter, cover, and refrigerate for several hours. Serve with whole grain crackers and carrot sticks. Yield: 2 1/2 cups. |
