| | Spicy Spinach Balls
8 ounces of ground turkey breast of 96% lean ground beef 1 teaspoon of dried Italian seasoning 1 teaspoon of whole fennel seeds 1 teaspoon of crushed fresh garlic 1/2 teaspoon of crushed red pepper 1/4 teaspoon of salt, optional 1 package (10 ounces) of frozen chopped spinach, thawed and squeezed dry 1 1/2 cups of cooked brown rice or bulgur wheat 3/4 cup of finely chopped onion 1/3 cup of grated nonfat or reduced fat Parmesan cheese 2 egg whites
Sauce
1/2 cups of fat free marinara sauce
Combine the ground turkey or beef and the herbs and spices in a medium sized bowl, and mix thoroughly. Set aside for 15 minutes. Add the remaining spinach ball ingredients, and mix well.
Coat a baking sheet with nonstick coking spray. Shape the spinach mixture into 32 (1 inch) balls, and place them on the baking sheet. Bake at 350ºF. for about 25 minutes or until browned.
Place the marinara sauce in a small saucepan, and simmer over medium low heat just until hot. Transfer the sauce to a small bowl. Arrange the spinach balls on a serving platter, and serve hot, accompanied by the sauce.
