Spicy Stuffed Eggs


 

 Spicy Stuffed Eggs

6 large eggs, hard cooked
1 green onion, including the top, finely chopped
1 tablespoon of mayonnaise
1 tablespoon of minced parsley
2 sweet gherkin pickles, finely chopped
1/2 teaspoon of prepared mustard
1/8 teaspoon of salt
1/8 teaspoon of freshly ground black pepper
8 sprigs parsley, if desired  

Cook the eggs, peel and halve lengthwise. Place 1 yolk in a small bowl, discard remaining yolks. Mash the yolk with a fork, then add 4 of the white halves and mash. Mix in the onion, mayonnaise, parsley, pickles, mustard, salt and pepper. Mound the mixture into remaining white halves, dividing it equally. Garnish each half, if desired, with a sprig of parsley. Cover loosely and refrigerate until ready to serve. Makes 8 servings
