| Swiss Cheese Fondue One 8 ounce package of natural Swiss cheese sliced, cut into strips 1 tablespoon of flour 1/4 teaspoon of dry mustard 1 clove garlic, cut in half 1 cup of dry white wine A dash of salt A dash of white pepper A dash of nutmeg 2 tablespoons of Kirsch French or Vienna bread
Toss together the cheese with flour and mustard. Rub the inside of fondue cooker, chafing dish or electric skillet with garlic. Pour in the wine, and heat until bubbles rise to the surface. Never let it boil. Add the cheese mixture, 1/2 cup at a time and stir constantly, letting each amount melt completely before adding another. Continue stirring until mixture bubbles lightly. Stir in seasonings and Kirsch. Keep the fondue bubbling while serving. Serve with bite size chunks of bread with a crusty edge for dunking into the fondue. If the fondue becomes too thick, pour in a little warmed wine. |
