Asparagus -Cheese and Egg Casserole

2 tablespoons of butter or margarine
2 tablespoons of flour
1 2/3 cup of evaporated milk
1/4 teaspoon of salt
1/4 teaspoon of pepper
2 cups of cooked cut asparagus
3 hard cooked eggs, sliced
8 thin slices of cheese
1/4 cup of chopped toasted almonds



Melt the butter in a saucepan, then stir in the flour until smooth. Add the milk gradually, stirring constantly. Cook over low heat, stirring until thick and smooth. Season with salt and pepper. Arrange alternate layers of asparagus, eggs, cheese slices and almonds in a greased 1 quart casserole. Pour the sauce over casserole. Bake in a 350ºF. oven for 20 minutes. 4 - 5 servings
