1 pound of large shrimp 1 recipe of sweet sour sauce
3 tablespoons of flour 1/2 tablespoon of cornstarch 1 egg 1/2 teaspoon of salt 1/2 teaspoon of sherry 1/2 teaspoon of minced ginger root 3 tablespoons of water Oil for deep frying
Shell the shrimp and take out black vein. Cut shrimp into 1 to 1 1/2 inch pieces. Prepare the sweet sour sauce and keep warm. Mix flour, cornstarch, egg, salt, sherry, ginger root and water into a smooth batter. Heat the oil for deep frying. Dip shrimp pieces in the batter to coat lightly and deep fry, dropping them in the hot oil one by one, for about 3 minutes or until floating and golden brown. Drain on paper towels.
