2 to 2 1/2 quarts of water 2 teaspoons of salt 1 tablespoon of oil 1 pound of noodles
Bring the water, salt, and oil to a boil over high heat. Add noodles a few at a time so that the water maintains the boil. Boil uncovered 6 minutes for dried noodles and 5 minutes for fresh noodles, stirring occasionally. Test noodles for doneness. They should be firm or al dente, not soft. If they are not done, continue cooking for 1 or 2 minutes. Drain noodles and rinse under cold water. If they are to be used right away, drop them into boiling water until just heated through. Drain and use as needed. If they are to be used later, spread them out in a large bowl and sprinkle with a little oil to prevent sticking. Reheat as directed above. 4 to 6 servings |
