one 8 to 9 pound fresh beef brisket
2 quarts of water
1 teaspoon of salt
4 whole black peppercorns
1 onion stuck with 2 cloves
1 bay leaf
1 carrot
Hickory Barbecue Sauce
24 sesame seed buns



Place the brisket in a large kettle or covered roaster. Add 2 quarts of water, salt, peppercorns, onion, bay leaf and carrot. Bring to boil. Reduce heat and simmer, covered 2 to 2 1/2 hours, or until fork tender. Drain, discard herbs and vegetables.
To oven glaze brisket: Preheat oven to 375ºF. Trim excess fat from brisket. Place in shallow foil lined baking pan. Brush brisket with Barbecue sauce. Bake for 20 to 30 minutes, basting occasionally with sauce until glazed.
To grill brisket: Preheat grill or prepare and light charcoal grill. Trim excess fat from brisket. Place brisket on grill. Brush with Barbecue sauce.
Grill about 10 to 15 minutes per side, basting occasionally with sauce until glazed.
To serve: Place brisket on a wooden cutting board. Cut across grain into 1/4 inch thick slices.
Place slice of meat on split buns. Pour a little extra warm Hickory Barbecue Sauce on meat. Makes 24 buns
