1 pound of butter
Heat butter in a small heavy saucepan over moderate heat until melted.
Skim off the top foam. Slowly pour off the clear yellow fat which is the clarified butter and discard the milky residue at the bottom of the pan. Serve clarified butter hot.
Makes about 1 1/2 cups |
