2 cups of unsifted all purpose flour or unbleached all purpose flour 1/2 cup of sugar 1 1/4 teaspoons of salt 2 packages of active dry yeast 3/4 cup of milk 1/2 cup of water 2/3 cup of margarine 3 eggs, room temperature 1/2 cup of unsifted all purpose flour 3 to 4 cups of unsifted all purpose flour 3/4 cup of chopped blanched almonds 3/4 cup of mixed candied fruits 1/3 cup of golden raisins 1 1/2 cups of confectioners' sugar 2 tablespoons of milk Blanched almonds, optional Candied cherries, optional Candied citron, optional
In a large bowl, thoroughly mix 2 cups flour, sugar, salt, and un-dissolved dry yeast. Combine milk, water and margarine in a saucepan. Heat over low heat until liquids are warm. Margarine does not need to melt. Gradually add warm liquid to dry ingredients and beat 2 minutes at medium speed of an electric mixer, scraping bowl occasionally. Add eggs and 1/2 cup flour or enough flour to make a thick batter. Beat at high speed 2 minutes, scraping bowl occasionally. With a large spoon stir in enough additional flour to make a soft dough. Turn out onto lightly floured board; knead until smooth and elastic, about 8 to 10 minutes. Place in greased bowl, turning to grease top. Cover and let rise in warm place, free from draft, until double in bulk, about 1 1/2 hours. Combine almonds, candied fruits and raisins Punch down dough; turn out onto lightly floured board. Knead in nuts and fruit mixture. Divide dough into three equal pieces. Roll each piece of dough into a 12x7 inch oval. Fold in half lengthwise. Place on greased baking sheets. Cover; let rise in warm place, free from draft, until double in bulk, about 45 minutes. About 15 minutes before rising time is up, preheat oven to 350ºF. Bake stoollen 20 to 25 minutes until done, or until they sound hollow when rapped with knuckle. Remove from baking sheets immediately and cool on wire racks. Combine confectioners sugar and milk smoothly. Pour on top of slightly warm stollen. If desired decorate with blanched almonds, candied cherries and citron. Makes 3 stollen
