| | Vanilla Coffee Liqueur
1 pint of light corn syrup 1 cup of sugar 1/2 cup of water 1/2 cup of instant coffee powder 1 bottle (4/5 qt) of vodka 1 vanilla bean, split lengthwise or 2 tablespoons of pure vanilla extract
In a large saucepan combine syrup, sugar and water. Heat to boiling point, stirring constantly. Reduce heat: simmer and stir just until sugar dissolves ( about 2 minutes). With a wire whisk, gradually beat in coffee powder. Beat until thoroughly dissolved over very low heat. Remove from heat, add vodka and vanilla bean. Pour into jars or bottles, dropping a piece of vanilla bean in each jar. Cover, label and let age for at least 2 weeks. This allows flavors to mellow. At holiday time pour into attractive, dark decanter type bottles, cork. Tie with yarn or ribbon. It is a nice to wire the recipe and give it along with the liqueur. Serve in cordial glasses or pour a little over vanilla, coffee or chocolate ice cream. Makes about 1 1/2 quarts |
