Cabbage & Pepper Stir Fry

2 teaspoons of cornstarch
1/4 cup of chicken stock
2 tablespoons of packed brown sugar
2 tablespoons of cider vinegar
1/4 teaspoon of crushed red pepper flakes
2 teaspoons of olive oil
2 large sweet red or yellow peppers, thinly sliced
3 cups of sliced green cabbage
1/4 cup of sliced scallions



Place the cornstarch in a medium bowl. Add the stock and stir until smooth. Stir in the brown sugar, vinegar, and red pepper flakes.
Coat a 10' non stick skillet with non stick cooking  spray and lace over medium high heat until hot. Add the oil, peppers, and  cabbage. Cook, stirring for 3 to 5 minutes or until crisp tender. Add the scallions and the stock mixture. Cook, stirring for 1 minute or until the sauce thickens. Makes 4 servings
