  Chinese Hot Sweet & Sour Cabbage

Sauce:
1 tablespoon of soy sauce
1 tablespoon of vinegar
1 tablespoon of sugar
1 teaspoon of sesame oil
1/2 teaspoon of salt

Dried red chili peppers (2 or 3)
2 tablespoons of chopped onion
5 cups of coarsely cut cabbage
3 tablespoons of vegetable oil
 



Mix sauce ingredients in a small bowl and set aside.
Break chili peppers in half. Chop onion. Cut cabbage into 1 1/2 inch pieces.

To cook:
Heat vegetable oil in wok or large fry pan over high heat. Add dried red chili peppers. When the oil begins to smoke and the peppers turn dark, Remove peppers from pan and discard.
Brown onion for a few seconds. Add cabbage and cook and stir about 1 minute. Pour the sauce over cabbage. Cook and stir until the cabbage is tender, about 3 minutes.
Serve hot.
Makes 4 servings
