1 large head red cabbage 4 tablespoons of butter 2 tablespoons of sugar 1/4 cup of water 1/4 cup of wine vinegar 1 teaspoon of salt 1/2 teaspoon of pepper 3 apples
Wash the cabbage and drain it well, then shred it. Melt the butter in a large pot and add the shredded cabbage. Add sugar, and stir well. Cook gently for a few minutes. Add the water, vinegar, salt, and pepper; cover and cook the cabbage very slowly for 1 1./2 hours. Core and chop the apples. (Peel them if you prefer, but the apple skin adds flavor.) Add the apples to the cabbage; cover this and cook it for another 1/2 hour. Add more sugar and salt if needed, and serve. Makes 8 - 10 servings. |
