6 large cabbage leaves
Boiling water
one 9 ounce package of quick frozen spinach, thawed and chopped
1 egg
1 cup of shredded sharp Cheddar cheese
1 teaspoon of salt
1 cup of cooked long rice
1 teaspoon of grated onion



Pour boiling water over cabbage leaves. Let stand 10 minutes. Drain and pat dry. Cut each leaf in half lengthwise. Remove center rib. Combine remaining ingredients. Spoon 1 tablespoon of spinach mixture on each piece of cabbage. Roll up, folding edges in and ends under. Fasten with toothpicks.
Cook in steamer over rapidly boiling water for 30 minutes or until cabbage is tender. Or add cabbage rolls to pot of boiling beef tongue or chicken 30 minutes before meat is done. Serve hot with meat. Makes 6 servings.

A great favorite with men, especially. It may also be baked covered with tomato sauce - 40 minutes at 350ºF.
