6 large tomatoes 3 tablespoons of flour 1 1/2 teaspoons of salt 1/4 teaspoon of pepper 1/4 cup of butter or margarine 10 small toast strips 1 1/2 cups of milk 1 1/2 teaspoons of sugar 2 tablespoons of ground cooked beef 1 1/2 teaspoons of prepared mustard
Cut the stem end from tomatoes. Cut tomatoes in thick slices crosswise. Combine 1 tablespoon of flour with half of salt and pepper, dredge slices. Sauté in butter or margarine until golden on both sides. Remove all but 2 slices to hot toast covered platter. Mash the remaining 2 slices into skillet juices. Stir the remaining 2 tablespoons of flour into them. Add milk, stirring well. Add the remaining 3/4 teaspoon of salt, the sugar, ground meat, and mustard. Stir and cook until boiling and slightly thickened. Pour over tomatoes and toast. Serve at once. Makes 5 or 6 servings.
