Fresh Peach Cobbler
1/2 cup of sugar 1 tablespoon of cornstarch 4 cups of fresh peaches, sliced and cubed 1 teaspoon of lemon juice dash of ground nutmeg 1 tablespoon of sugar 1 cup of unsifted all-purpose flour 1/2 teaspoon of baking powder 1/2 teaspoon of salt 3 tablespoons of vegetable shortening 1/2 cup of milk
Preheat oven to 400ºF. Blend 1/2 cup of sugar and cornstarch in medium saucepan. Stir in peaches, lemon juice, and nutmeg. Cook, stirring constantly, until mixture comes to a boil. Boil and stir 1 minute. Pour hot fruit mixture into ungreased 2-quart casserole. Place in oven to keep hot while preparing biscuit topping. Combine 1 tablespoon sugar, flour, baking powder, and salt in a bowl. Add shortening and milk. Cut through shortening 6 times; mix until dough forms a ball. Drop dough by 6 large spoonfuls onto hot fruit. Bake 25 to 30 minutes until biscuits are golden brown. Serves 6.
