| | Herbed Tomato Slices
2 large tomatoes salt and pepper Sugar 1/4 cup of fine crumbs 1 1/2 tablespoons of mixed dried herbs 3 tablespoons of butter or margarine
Wash and skin tomatoes. Cut each in 3 or 4 thick slices, depending on size of tomato. Place slices in greased shallow baking pan. Sprinkle each lightly with salt, pepper and sugar. Add crumbs, herbs and dabs of butter or margarine. Broil under moderate heat, 3 inches from flame, about 3 minutes or until the crumbs are brown. Makes 2 to 4 servings. |
