|  | Sesame Bread Sticks
2 cups of unbleached white bread flour, plus extra for dusting 2 cups of strong whole wheat flour 1 package of rapid rise dry yeast 2 teaspoons of salt 1/2 teaspoon of sugar about 2 cups of lukewarm water 4 tablespoons of olive oil, plus extra for greasing 1 egg white, lightly beaten sesame seeds, for sprinkling
Combine the flours, yeast, salt and sugar in a bowl and make a well in the center. Gradually stir in most of the water and all the olive oil, to make a dough. Gradually add the remaining water, if necessary, drawing in all the flour.
Turn out onto a lightly floured counter and then knead the dough for about 10 minutes, until smooth and elastic. Wash the bowl and lightly coat with olive oil.
Shape the dough into a ball, put it in the bowl, and turn it over so it is coated. Cover tightly with a dish towel or lightly oiled plastic wrap and set aside in a warm place, until the dough has doubled in volume. Meanwhile, line a cookie sheet with baking parchment.
Turn out the dough onto a lightly floured counter and knead lightly. divide dough into 2 equal pieces. Roll each piece onto a 16 inch rope and then cut each rope into 8 equal pieces. Cut each piece in half again to make a total of 32 pieces.
Cover the dough you are not working with a dish towel or plastic wrap to prevent it from drying out. Roll each piece of dough into a thin 10 inch rope on a very lightly floured counter. Carefully transfer to the cookie sheet.
Cover and set aside to rise for 10 minutes. Brush with egg white, then sprinkle evenly and thickly with sesame seeds. Bake, in a preheated oven, 450ºF. for 10 minutes.
Brush again with egg white and bake for another 5 minutes or until golden brown and crisp. Transfer the bread sticks to wire racks to cool. Makes 32 sticks |
