1 pound of fresh broccoli vegetable cooking spray 1 tablespoon of reduced sodium soy sauce 1 tablespoon of sesame seeds, toasted 1 medium size sweet red pepper, sliced
Trim off large leaves of broccoli. Remove tough ends at lower stalks, wash broccoli thoroughly. Separate broccoli into spears. Peel spears, if desired and cut into 1/4 inch diagonal slices. Place broccoli in a steaming rack. Place rack over boiling water in a large skillet; cover and steam 3 to 5 minutes or until crisp tender. Coat a large skillet with cooking spray. Add soy sauce, and place over medium heat until hot. Add broccoli; cook 1 to 2 minutes or until tender, stirring constantly. Transfer broccoli to a serving dish. Sprinkle with toasted sesame seeds, and garnish with sliced red pepper. 4 servings
