| | Cranberry Sauce Chicken
1/2 cup of flour 1 teaspoon of salt 1/8 teaspoon of pepper 6 chicken pieces oil 2 tablespoons of brown sugar 1 tablespoon of cornstarch 3/4 cup of cranberry juice cocktail one 16 ounce can of cranberry sauce 1 teaspoon of ground nutmeg 1 teaspoon of ground marjoram 1 tablespoon of minced onion
Mix flour, salt, and pepper together in paper bag. Place chicken in bag and shake until well coated with flour mixture. Pour oil to depth of 1/4 inch of bottom of heavy skillet. heat oil and brown chicken on all sides. Cover tightly. Reduce heat and simmer for 20 to 30 minutes, turning occasionally until chicken is tender. Drain on paper towels. Mix brown sugar and cornstarch together in saucepan. Gradually stir in cranberry juice until smooth. Add cranberry sauce, spices and onion. Cook over medium heat, stirring constantly, until mixture comes to a boil. To serve, place chicken on serving platter and spoon cranberry sauce on top. Serves 4 |
