| | Harvest Squash Medley
one 1 1/2 pound butternut squash, peeled and seeded 2 sweet potatoes, about 3/4 pound, peeled 3 tablespoons of butter or margarine 1/4 cup of honey 1/4 cup of orange juice 1/2 teaspoon of ground cinnamon 1/8 teaspoon of ground nutmeg 1 tablespoon of grated orange rind 2 small cooking apples, peeled, cored and sliced 1/2 cup of chopped walnuts, toasted
Cut squash and sweet potatoes into 3/4 inch chunks. Place in a lightly greased 11x7x1 1/2 inch baking dish, set aside. Combine butter and next 5 ingredients in a small saucepan. Bring to a boil over medium heat, stirring constantly, pour over squash and sweet potato. Cover. Bake at 350ºF. for 30 minutes. Uncover and stir in apples. Bake, uncovered at 350ºF. for 30 additional minutes or until tender. Sprinkle with walnuts. 6 to 8 servings |
