3 medium size sweet potatoes 1/2 cup of firmly packaged brown sugar 1 teaspoon of ground cinnamon 1 teaspoon of ground nutmeg 2 large Winesap or other cooking apples, peeled and cut into 1/4 inch rings Streusel topping
Cook unpeeled sweet potatoes in water to cover in a Dutch oven 25 minutes or until tender, do not over cook. Drain and cool, peel and slice into 1/4 inch rounds. Combine brown sugar, cinnamon, and nutmeg. Layer sweet potato, apples, and brown sugar mixture in a lightly greased 11x7x1 1/2 inch baking dish, beginning and ending with sweet potato. Sprinkle sweet potato with Streusel Topping. Bake at 350ºF. for 30 minutes 8 servings
Streusel Topping
1/4 cup of all purpose flour 1/4 cup of firmly packed brown sugar 1/4 cup of butter or margarine 1/4 cup of chopped pecans
Combine all ingredients. Yield about 1 cup |
