| | Turkey Salad w/Yogurt
4 cups of water 1 teaspoon of salt one 2 1/4 pound turkey drumstick 2 bananas, peeled and sliced 2 red apples, peeled, cored and diced Juice of 1/2 lemon 1 small pineapple, cut into small cubes 1 3/4 cups of seedless red grapes, halved 1 3/4 cups of heavy whipping cream 2 1/2 cups of plain full cream yogurt 1/8 teaspoon of salt 1/8 teaspoon of pepper 1 tablespoon of brandy 6 sprigs of fresh mint for garnish
Bring water and salt to a boil in large saucepan. Add drumstick, cover and simmer for 1 hour. Combine banana slices and apples; sprinkle with lemon juice. Ad pineapple and grapes. Remove drumstick from broth and let cool. Remove meat from bone and let cool. Remove meat from bone and cut into small cubes. Add to fruit. Whip cream until stiff. Mix whipped cream with yogurt, salt, pepper and brandy. Pour this sauce over fruit and turkey, mix well. Garnish with mint sprigs and serve. Serves 4 |
