|  | France Fried Potatoes w/Cheese Le Truffade
1 pound of potatoes, peeled and thinly sliced 1 tablespoon of butter 1 tablespoon of oil 2 slices of bacon, diced 1 clove garlic, crushed 1 teaspoon of salt freshly ground black pepper a dash of nutmeg 1/2 cup of grated Cheddar cheese
Dry the potato slices very thoroughly. In a heavy skillet, heat the butter and oil. Add the potato slices, bacon, garlic, salt, pepper, and nutmeg and sauté over high heat until the potatoes are tender. Lower the heat, cover the pan and cook for 15 minutes. Uncover, raise the heat and, pressing down on the potatoes with a spatula, cook until a brown crust forms and the potatoes form a pancake. Slide the pancake onto a plate and invert back into the skillet to brown the other side. Remove from the heat and sprinkle on the cheese. Cover the skillet and allow the cheese to melt. Cut into wedges and serve hot. 2 to 3 servings |
