|  | Fried Potato Skins
4 large baking potatoes Salad oil 1/4 cup of all purpose flour Salt
1.Wash and dry potatoes, rub lightly with oil. Place in shallow pan. Bake at 450ºF. for 45 minutes or until fork tender, cool. 2. Cut potatoes in half lengthwise, scoop out pulp, leaving 1/4 inch shell (reserve pulp for another use). Cut skins lengthwise into 1 inch strips. Dip skins in flour to coat. 3. In a 4 quart saucepan, heat 2 inches oil to 375ºF. Fry a few skins at a time 2 minutes or until lightly browned. Drain on paper towels. Repeat with remaining skins. 4. To serve: Arrange hot skins on serving plate, sprinkle with salt.
To microwave: wash and dry potatoes, rub lightly with oil. Prick skins of potatoes, before cooking. Place on microwave safe dish. Microwave on HIGH 20 to 22 minutes or until done, turning occasionally. Let stand 2 minutes. Proceed as in step 2.
Tip: Serve with Guacamole or grated Parmesan cheese, if desired. 4 servings |
