|  | Hashed Brown Potatoes
1/4 cup of bacon drippings or salad oil 8 medium potatoes, cooked peeled and diced 1 onion, finely chopped 1 teaspoon of salt 1/8 teaspoon of pepper
In a 10 inch skillet over medium high heat, heat drippings. Add potatoes to skillet, press down firmly with spatula. Sprinkle with onion, salt and pepper. Reduce heat to medium. Cook until golden on bottom, pressing down potato mixture occasionally. With spatula, turn potatoes about 1/5 at a time, press down. Cook until golden, turning as necessary. 6 servings |
