|  | Ice Cream Cookie Sandwiches
1/2 cup of shortening 1 cup of packed dark brown sugar 1/2 teaspoon of pure vanilla extract 1 egg 1 1/2 cups of sifted all purpose flour 1 cup of finely chopped walnuts 1/2 cup of shredded bran cereal 1/2 teaspoon of grated orange rind 1/2 teaspoon of salt 1/4 cup of milk 3 cups of vanilla ice cream
In large bowl with electric mixer at high speed, beat shortening with sugar and vanilla until light and fluffy. Beat in egg. On sheet of waxed paper, mix flour, walnuts, shredded bran cereal, orange rind, baking soda and salt. Blend flour mixture into batter alternately with milk. Makes 20 cookies: drop by heaping tablespoonfuls onto lightly greased baking sheet, 4 inches apart. Spread dough to make a cookie 2 inches in diameter and 1/4 inch thick. Bake in preheated 400ºF. oven 5 to 8 minutes just until cookies are golden but still soft. Do not overbake. Cool 1 minute, then remove from baking sheet and cool completely. Spread about 1/3 cup of ice cream on bottom of 10 cookies. Top with remaining cookies to make sandwiches. Freeze at least 1 hour before serving. For long periods of freezing, wrap well in foil, label and freeze. Makes 10 sandwiches |
