|  | Stewed Apples & Potatoes
6 medium raw potatoes (1 1/2 pounds), peeled milk 2 medium cooking apples, cored, peeled and diced salt white pepper ginger chopped parsley
Cut the potatoes in 1/4" slices, pit in heavy skillet and add 1 cup of milk. Bring to a boil, cover and simmer until almost tender. Add apples, stir carefully and add more milk if necessary. Milk should be almost absorbed when potatoes are soft. Season with salt, pepper and ginger and sprinkle with parsley. Good with sausage or other pork. Makes 4 servings |
