1 cup of firmly packed brown sugar 2 tablespoons of cornstarch 2/3 cup of milk 1/3 cup of butter or margarine, melted 5 1/2 cups of peeled, coarsely chopped cooking apples (about 2 pounds) Baked Omelets Sour Cream
Combine the brown sugar and cornstarch in a large saucepan, stir in milk and melted butter. Cook mixture over medium heat until thickened, stir in chopped apple, and cook 8 minutes or until tender. Place 1 omelet on serving plate, browned side up, spread with 1/3 of apple mixture. Repeat procedure layering remaining omelets and apple mixture. Cut into quarters, top each portion with a dollop of sour cream. Yield 4 servings
