| | Mexican Apple Pie
1 1/2 cups of sugar 2 cups of water 1/2 cup of butter or margarine, melted 4 cups of peeled and chopped Golden Delicious apples, about 1 1/2 pounds 2 teaspoons of ground cinnamon ten 6 inch flour tortillas whipped cream ground cinnamon, optional
Combine the sugar and water in a small saucepan, cook over medium heat, stirring constantly, until sugar melts. Set aside. Place butter in a 13x9x2 inch baking dish, set aside. Combine apples and 2 teaspoons of cinnamon, stirring to coat. Place about 1/2 cup of apple mixture down center of each tortilla. Roll up and place, seam side down, in baking dish. Pour sugar mixture over top of tortillas and cover with aluminum foil. Bake at 350ºF. for 30 minutes. Let stand 10 minutes. Serve warm with whipped cream, sprinkle with additional cinnamon, if desired. Yield 10 servings. |
