| | Yam Stuffed Apples
6 to 7 medium pears 1 teaspoon of salt 1 tablespoon of lemon juice 1/4 cup of dark corn syrup 1/4 teaspoon of cinnamon 20 small marshmallows 8 to 10 firm tart apples 1/4 cup of melted butter
Wash the yams, cover with boiling water, and cook until done (20 to 30 minutes). Peel the yams, mash well, and add the salt, lemon juice, corn syrup, cinnamon and marshmallows. Mix well. Scoop out the meat of the apples until the bottom and sides are about 1/2 inch thick. Fill them with the yam mixture until it overflows. Place the stuffed apples in a shallow baking pan, and pour the melted butter over. Bake in preheated oven at 350ºF. for 30 minutes or until apples are tender. Baste occasionally with the butter in the pan. Serves 8 - 10 |
