Avocado Bread
3/4 cup of mashed ripe avocados
3 eggs
1 cup of vegetable oil
3 teaspoons of vanilla
3 cups of all-purpose flour
1 1/2 cups of sugar
2 teaspoons of cinnamon
1 teaspoon of salt
1 teaspoon of baking soda
1/2 teaspoon of baking powder
3/4 cup of walnuts, chopped
one 9- x 5-inch loaf pan
Preheat oven to 350ºF. Grease the
loaf pan and set aside. Mash the avocados and mix with the eggs,
oil, and vanilla. Blend well. Add the flour, sugar, cinnamon, salt,
baking soda, and baking powder. Fold in the nuts. Bake for 1-1/2
hours. Cover the top loosely with foil after the first 30 minutes. *
