Israel Stuffed Avocado

4 avocados
1 tablespoon of lemon juice
4 tablespoons of olive oil
2 tablespoons of brandy
1 tablespoon of wine vinegar
1/2 teaspoon of salt
1 teaspoon of sugar
freshly ground black pepper
1/2 cup of peeled and cubed cucumber
2 small sour apples, peeled and cubed
1 cup of small shrimp, boiled
a few sprigs of fresh dill weed



Cut the avocados in half lengthwise. Remove the seeds and scoop out some of the pulp. Brush the avocado halves with lemon juice. Combine the oil, brandy, vinegar, salt, sugar and pepper. Add the cucumber, apples and shrimp, toss well and marinate in a cool place for 30 minutes. Spoon the mixture into the halved avocados and garnish with a sprig of fresh dill or parsley. 4 servings
