| Apple Muffins 2
1 3/4 cups of all purpose flour 1/2 cup of sugar 1/2 teaspoon of salt 1/2 teaspoon of baking soda 1/2 teaspoon of ground cinnamon 1 1/2 cups of finely chopped, peeled apple one 8 ounce carton of sour cream 1/2 cup of vegetable oil 1 egg 1/2 cup of chopped pecans 1 teaspoon of vanilla extract
Combine flour, sugar, salt, soda, cinnamon, and apple in a large mixing bowl. Combine sour cream, oil, egg, pecans, and vanilla; add to dry ingredients, stirring just until moistened. Spoon batter into greased or paper lined muffin pans, filling three-fourths full. Bake at 350ºF. for 25 minutes or until lightly browned. Remove from pans, and cool slightly on wire racks. Serve warm. Yield: 1 1/2 dozen |
