| | Applesauce Muffins
2 1/4 cups of biscuit mix 1/2 cup of sugar, divided 2 teaspoons of apple pie spice, divided 2/3 cup of milk 1/2 cup of applesauce 1/4 cup of butter or margarine, melted and divided 1 egg, beaten
Combine biscuit mix, 1/4 cup of sugar, and 1 1/2 teaspoons of apple pie spice in a large mixing bowl. Set aside. Combine milk, applesauce, 2 tablespoons butter and egg; add to dry ingredients, stirring just until moistened. Spoon batter into greased or paper lined muffin pans, filling three fourths full. Bake at 400ºF. for 20 minutes or until golden brown. Remove muffins from pan, and cool slightly on wire racks. Combine remaining 1/4 cup of sugar and 1/2 teaspoon of apple pie spice. Dip tops of muffins in remaining butter, dip in sugar mixture. Yield: 1 dozen |
