| | Apricot Nut Bread
2 1/2 cups of flour 1 cup of sugar 1 1/2 tablespoons of baking powder 1/2 teaspoon of Lite Salt or less 3 tablespoons of oil 1/2 cup of skim milk 2 egg whites 1/4 cup of orange juice 4 teaspoons of grated orange peel 1/4 cup o chopped pecans 10 large halves dried apricots, chopped
Preheat oven to 350ºF. Lightly oil and flour 9x5 inch loaf pan. Measure all ingredients into large mixer bowl; beat on medium speed 1/2 minute, scraping sides and bottom of bowl constantly. Pour into pan. Bake 35 to 45 minutes or until wooden pick inserted in center comes out clean. Remove from pan after 5 minutes; cool thoroughly before slicing. Makes 1 loaf (16 slices). |
