Banana Nut Bread

2 cups of flour
1 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of butter
1 cup of sugar
2 eggs
1 teaspoon of vanilla
3 medium mashed bananas
1/2 cup of minced walnuts




Cream the butter and sugar, Add eggs, vanilla, baking soda, and salt and then stir. Add bananas and stir. Add nuts and mix. Then add the flour.

DO NOT overmix. Mix just to moisten the flour.

Place in a 9 x 5 x 3 or a 8" square pan. Bake at 325ºF.   for 55-60 minutes. Test with a cake tester. An 8" square pan will take less time so watch carefully.
