2 cups of All-Purpose biscuit mix 2 tablespoons of granulated sugar 1 egg 2/3 cup of milk
Combine biscuit mix and sugar in large bowl. Beat egg in separate bowl and add milk; beat to blend. Combine dry and liquid ingredients. Fill greased muffin pans 2/3 full. Bake in preheated 400ºF. oven 18 to 22 minutes. Makes 9 large muffins.
Variations: Upside Down Muffins: Prepare basic muffins, increasing milk to 1 cup. Into each greased muffin cup, place: 1 tsp margarine 2 tsp brown sugar 2 tsp chopped nuts Spoon muffin mixture on top, filling 2/3 full. Bake in preheated 400ºF. oven 20 to 25 minutes. Makes 10 muffins.
Orange Muffins: Prepare basic muffins, stirring 1 tablespoon grated orange rind into dry mixture, and use 1/3 cup orange juice and 1/3 cup milk for the liquid. Proceed as for basic muffins.
