Cranberry Nut Loaf

2 cups of flour
1 1/2 teaspoon of baking powder
1 teaspoon of salt
1/2 teaspoon of baking soda
1 egg
1 cup of sugar
3/4 cup of orange juice
3 tablespoons of vegetable oil
1 1/2 cup of cranberries, chopped
1 cup of chopped nuts


Sift together the flour, baking powder, salt and soda. Put egg, sugar, orange juice and oil in blender. Blend only until mixed. Add cranberries and nuts, blend. Add dry ingredients and stir until barely moistened. Turn into a greased 9 x 5 x 3 inch loaf pan. Bake in a 350ºF. oven for 45 minutes or until a tester inserted into the middle comes out clean. Turn out of pan onto a wire rack and cool before slicing.
