Cranberry Bread

2 oranges
2 cups of whole wheat flour
2 cups of white flour
1 teaspoon of baking powder
1 teaspoon of baking soda
2 cups of sugar or less
3 egg whites
1/4 cup of oil
1/2 cup of chopped nuts
2 cups of ground or sliced cranberries



Preheat your oven to 325ºF. Grate the rind off the oranges and reserve. Cut the oranges in half and squeeze out the juice. Add enough boiling water to juice to make 1 1/2 cups liquid. Combine the juice and rind with all the other ingredients. Place in two lightly oiled 9 x 5 inch loaf pans. Bake for 1 hour or until a wooden toothpick inserted into the center comes out clean. Makes 2 loaves
