Raisin Brown Bread

1 cup of raisins
1 beaten egg
1 cup of packed brown sugar
2 tablespoons of cooking oil
1 tablespoons of grated orange peel

2 1/2 cups of all purpose flour
2 teaspoons of baking powder
1 teaspoon of salt
1/2 teaspoon of baking soda 

Combine the raisins and 11/2 cups of water, bring to boiling. Remove from heat, cool to room temperature. Stir in the egg, brown sugar, oil and orange peel. Stir together the flour, baking powder, salt and baking soda, add to the raisin mixture, stirring just until blended. Pour into a greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. Bake at 325ºF. until done, about 1 hour. Remove from pan and cool. Makes 1 loaf
